Dutch Baby (Dutch baby pancake or German pancake) is actually a dish of American cuisine. It is such a big pancake, which is baked in the oven in a cast-iron frying pan it rises strongly and then falls quickly when taken out of the oven.

Classically, Dutch Baby is cooked from wheat flour, eggs and milk. Today we will cook a gluten-free version of this dish. In the recipe, I use oat flour and rice flour for the recipe, but you can mix any gluten-free flour that works for you.

We’ll also add caramelized apples, and this is no joke!  It will be very delicious!

I make this dish sometimes for breakfast as an alternative to pancakes.

For cooking, you will need a cast-iron frying pan, which can be placed in the oven. I have a diameter of 26 cm

Preheat the oven to 220 degrees Celsius.


Mix with a whisk until smooth. In one bowl for the dry ingredients for the dough. In another bowl, lightly beat up the eggs, add milk and vanilla with sugar. Mix well.

Add the liquid ingredients to the dry ones and mix with a whisk until smooth. You should get a liquid dough. If you used a different mixture of flour and the dough is thick, you can add some more plant milk.

Leave the dough to stand for 10 minutes.


While the dough is standing, caramelize the apples.
First, peel the apple skin and seeds and cut it into thin slices. Mix sugar with spices.

Then in a cast-iron frying pan, which can be placed in the oven, heat the ghee oil. Add the sugar and heat until the sugar starts to melt. Add apple slices and cook until the caramel starts to bubble around the apples. Turn it over and caramelize it a little more.


Now pour the dough over the apples in a frying pan and place it in the oven.
Bake for about 15 minutes until golden brown and have browned edges.

During baking, the dough will rise unevenly, along the edges and in the center. It should be so, this is the main meaning of this dish. Soon after you take it out of the oven, the dough will fall off, so it should be too!
