4 Egg(s)
90 g of Almond flour
25 g of Coconut flour
100 g of Coconut yogurt Or almond yogurt
a pinch of Salt
1 tbsp. of Extra Virgin olive oil
1/2 tsp. of Baking powder
100 g of Strawberry Or apples
1/4 cup of Walnut
1/4 cup of Pecan nuts Or any other nuts
for frying Extra Virgin olive oil
Minty yogurt:
1/2 bunch of Mint fresh
1/2 tsp. of Lemon zest
1 tbsp. of Lemon juice
125 g of Coconut yogurt Or almond yogurt
1 tsp. of Honey
50 g of Strawberry Or apples

I say these are great diet pancakes, but my family says these are just awesome pancakes for everyone!

Pancakes based on coconut and almond flour, plus eggs, to which we add pieces of nuts and fruit, make a delicious and nutritious breakfast. They are denser than ordinary pancakes, but that doesn’t stop them from being a favorite on the table. I serve them with sweet and sour minty lemon yogurt to balance their texture and add freshness. I highly recommend trying these pancakes that way.

Chop walnuts into medium pieces. Then dice strawberries or apples finely.

Put all the other pancake ingredients in a food processor and mix them. Depending on the type of almond flour, the batter will either be slightly thicker than it would be for ordinary pancakes or much thicker. In the second case, add a little water until you have the desired consistency. Now add chopped nuts and diced strawberries or apples.

Heat olive oil in a frying pan. Then put the batter in and fry on both sides like ordinary pancakes.

While the pancakes are frying, prepare a minty yogurt. For this, chop the mint very finely. Dice strawberries or apples very finely. Mix all the ingredients and presto, it's done!

Serve the pancakes warm with minty yogurt.
