It’s a versatile way to cook beets that are guaranteed to retain their color and be very sweet. I highly recommend cooking beets this way.

Preheat the oven to 220 degrees Celsius.

Wash the beets and place them in a single layer in a baking dish with high sides. Pour about 1 cm of water on the bottom. Cover the beets with baking paper and then tightly with tin foil, or cover them with a lid if the baking dish has one.

Place the beets in the oven and bake for about 1 or 1.5 hours until the beets are soft. If the water evaporates, you can add a little more again.

Put the cooked beets in a bowl and let them cool slightly. While they are still warm, peel the beets, which will be very easy to remove with the back of a knife, or simply scrape them off with a paper towel.
The cooked beets can be used for any recipe. They also store well in the fridge.
