Directions
This dish is perfect for introducing a wide variety of vegetables into your diet. It has a whole palette of colors, and therefore nutrients. The dish is easy to make, it has a pleasant taste, can be served as a main dish or with rice, with poultry, meat or fish. In a word, it is a universal, delicious dish for your health.
African sweet potato stew can be made in advance and served the next day, it will be even tastier.

Cut the sweet potatoes into large or medium-sized chunks. Dice onion finely, mince the garlic and grate the ginger finely. |

Simmer onion over low to medium heat in olive oil until soft for about 15 minutes. Add garlic and ginger and simmer all together for about 1 minute. Now add the curry powder, stir and simmer all together for 30 seconds. |

Add the sweet potatoes, stir them well so that the spices cover the surface of the sweet potato pieces and simmer them together for about 5 minutes stirring all the time. |

Add tomatoes if they are whole and mash them into small pieces. Add broth to cover the vegetables. Bring them to a boil and stew over low to medium heat until the sweet potatoes are soft. The sweet potatoes will need about 40 minutes to soften since they are cooked in an acidic environment. |

When sweet potatoes are soft, add mushrooms and zucchini, stew them together for about 5 to 10 minutes. In the end, add green peas and spinach and cook all together for another 3 to 5 minutes. The final touch is to add almond butter to thicken the gravy and make it taste softer. Turn it off. You can serve it immediately or let it stand for a while. The stew tastes even better the next day. |
