Melon soup is a great idea for the last hot summer days – it’s cool, sweet, and fresh.

It perfectly pairs with ham. 

The recipe is pure improvisation. You can add anything you like. The only essential ingredients are melon, some salt, lime zest, and lime juice. Some of the most popular variations are:

If you’d like the soup to be thick and rich so that you can serve it in plates, don’t add water. If you’d like it thinner and subtler in flavor to serve in glasses, add cold water. 

Add mint leaves for a herby note. 

Add cayenne pepper in at the end. 

Add some melon liquer or vodka for flavor.

Sometimes milk or yogurt is added.

Peel and seed the melon. Cut it into chunks and transfer them to a blender. Add water, lime juice and zest, salt, and mint leaves. Blend until smooth.

Refrigerate until chilled, for 2 hours. Stir the mixture before serving. Try to taste, season, if needed.
