In order to cook succulent chicken breasts, you should cook it quickly and in a properly heated pan!
You should:
- Cut it in thinner pieces, evenly thick (1 cm thick).
- Cook in a properly heated pan over medium/high heat. I cook using position 5 out of 6 on the stove.
- Don’t place chicken pieces to close to each other.
- Cook quickly in order not to let juices escape before breasts are done. I cook for 2 min on each side, turning over chicken pieces 1-2 times.
If cooked properly, chicken will seal in its juices.
If while cooking you see juices escaping and chicken pieces are kind of floating in them – it is a sign, that the heat is not high enough, juices have been escaped and chicken is going to be dry. You should prevent it by not letting juices escape!
You may also marinate chicken additionally. There are different kinds of marinade. For succulent chicken, yoghurt or with addition of lemon juice marinade work great.
