Directions
Turkey meat has a neutral flavor, so citrus marinades work very well with it. In the photo, you can see turkey thighs marinated in red Sicilian oranges, which were in season ):. It’s one of my personal favorites and I have been using this marinade a lot. If you plan to roast a part of the turkey, I highly recommend using the bone-in thigh. It’s absolutely delicious!

To make the marinade, squeeze the juice from the oranges, with or without pulp. Optionally, grate the zest from one orange for added flavor. Then, add mustard, salt, black pepper, and olive oil. Mix all the ingredients together until a smooth marinade is obtained. Coat the turkey with the marinade on all sides and place it in the fridge to marinate overnight. |

The next day, preheat the oven to 200 degrees Celsius. |

Spread a small amount of olive oil on the bottom of a large baking dish. Place the turkey in the dish and add a sprig of rosemary to each piece. Arrange different vegetables around the turkey, drizzle them with olive oil, and season with salt and pepper. |

Cover the turkey with baking paper and tightly wrap it with foil. Bake in the oven at 200 degrees Celsius for 15 minutes, then reduce the temperature to 175 degrees Celsius and continue baking until the meat is soft. The baking time will depend on the weight of the turkey, usually taking 1.5 hours per 1 kg of meat. |

When the meat is soft, remove the foil and baking paper, increase the temperature to 220 degrees Celsius and bake for 15 minutes until the crust is golden brown. |
