It’s an easy, gorgeous and delicious seasonal recipe for roasted turkey. I roast drumsticks, but you can use the same marinade for a turkey roll or even a turkey filet.

Red currants are bright-colored and sour berries. But when combined with honey, they make a sour-sweet marinade that works great with turkey. To keep things simple, I suggest making everything at once in the Dutch oven or roasting tin, where you will roast the meat: combine ingredients, marinate the meat and roast it.

Mash red currants on the bottom of a roasting cauldron with a lid, which you can place into the oven. Then add salt, pepper and honey and stir them well combined. You will receive a mushy looking marinade.
Put turkey shanks in the roasting cauldron and coat them with marinade from all sides. Then put the lid on and set them into the fridge overnight.

The next day, preheat the oven to 220 degrees Celsius.

Place the roasting cauldron into the oven and let it heat at 220 degrees Celsius for 15 minutes. Then lower the temperature to 175 degrees Celsius and bake the turkey under the lid for 1 hour to 1 hour and 30 minutes. Time will depend on the meat. Check if it is done after 1 hour of baking.
