Directions
If you’re into Japanese food, you probably know about the traditional glutinous rice dessert, mochi. Years ago, Japanese immigrants came to Hawaii and started baking something like this in the oven with butter and eggs. That’s how the Hawaiian dessert Butter Mochi was born. It’s like rice pudding, with the crunchy crust and stretchy elastic texture of Japanese mochi.
If you love this texture, you have to try making this dessert! It’s so delicious that you won’t be able to resist it. Butter mochi is really easy to make. Just remember to let it cool completely after baking, otherwise, the texture won’t be right.
You will need a baking dish (I use a ceramic one) of a size that allows for a layer of dough of about 1.5 to 2 cm thick, but no more.

Preheat the oven to 175 degrees Celsius. |

Melt the ghee and let it cool. |

In a large bowl, whisk the eggs until they are nice and smooth. Then, add the coconut milk, water, sugar and salt and whisk until everything is combined and the sugar is dissolved. In another bowl, combine the glutinous rice flour and baking powder. Gradually add the dry mixture to the wet ingredients and stir until well combined. You will end up with a liquid dough. Next, add the melted ghee and give it another good mix. It will give you a glossy batter. |

Coat a rectangular baking dish generously with ghee. Pour in the batter and sprinkle coconut shavings evenly over the top. Right away place it in the oven and bake for 60 minutes. Within this time, you will notice a lovely golden brown crispy crust forming on the cake's surface. As it bakes, the cake will rise unevenly and then settle as it cools, which is as it should be. |

Once the cake has finished baking, take it out of the oven and allow it to cool to room temperature. It should have a dense, firm, yet tender and chewy texture. Cut the cake into squares and serve. |
