150 g of All-purpose gluten-free flour

100 g of Coconut flower sugar

100 g of Coconut oil

1 sachet of Vanilla sugar

1 tsp. of Baking powder

pinch of Salt

filling:

2 large Apple
-
1 tbsp. of Coconut flower sugar

1 tbsp. of Ground cinnamon

1 tsp. of Lemon juice
Directions
This is the perfect pie to serve after dinner. It’s delicious and very easy to make. Sourish apples compensate for the pie’s sweetness making it the ideal dessert to treat your loved ones!
The recipe uses all-purpose gluten-free flour that I make myself. You can find the recipe here.
It also uses coconut sugar together with coconut oil that gives the pie its dark color and caramel flavor.

Preheat the oven to 175C. |

Peel and core the apples. Cut them into 5 mm thick wedges. |

Drizzle the apples with lemon juice and mix. Add sugar and cinnamon, mix again. |

In a bowl, combine together the flour, baking powder, vanilla sugar, and salt. |

Melt the coconut oil. Combine with the coconut sugar and allow it to cool. |

Whisk the eggs until smooth. |

To the dry ingredients, add the eggs, coconut oil mixture, and combine until smooth with a spoon. |

Or, if you’re using a food processor, add all the ingredients and process them until smooth. |

Line the 20x20 cm baking pan with parchment paper. Transfer the batter to the pan smoothening the surface. Arrange the apples on top. |

Bake for 40 min at 175C. Take out and let cool for 20 min. Then transfer to a cooling rack to cool completely before serving. |
