Za’atar is a spice blend that is really worth trying. In my opinion, it’s what makes dishes truly Oriental. Za’atar is the name of the plant, the dried leaves of which are used for the Za’atar spice mixture. In Russian, it’s called Hyssop, a relative of marjoram, oregano and thyme. It’s the mixture of marjoram and thyme that is often substituted for hyssop in the Za’atar spice blend. I will be using them in this recipe too.

Za’atar can be bought ready-made, or you can make it yourself. To oregano and thyme, we will add sumac, sesame and salt.

P.S. Sumac is a burgundy-colored sour spice, the ground berries of the vinegar tree, Rhus coriaria.

Done

Toast sesame seeds in a dry pan until golden and let them cool. Add the rest of the ingredients, stir to combine and keep in a covered container.
