Directions
If you’ve baked a turkey using my Flavorful and juicy baked turkey recipe, it’s quite possible that you still have some flavorful baked meat leftover, after all, the bird is big if you bake it for a family dinner, there’s always something left over. That’s great too because you can make very cool dishes for the next day out of baked meat and you’ll spend a minimum of time and effort. Actually, that’s another reason to bake a turkey, it’s food for a week afterward :).
One of my favorites is a turkey salad with arugula pesto sauce, it’s a very healthy dish with lots of flavor. I serve it as a main course, it doesn’t need a side dish or a hot dish. It’s a complete meal both from a taste and nutritional point of view. It’s also great for lunch to go.

Boil the eggs until hard boiled and let them cool and then cut them into 4 slices. |

For the dressing, mix the pesto and olive oil until smooth. |

Mix all salad ingredients in a large bowl. Add the dressing, mix it, taste and season with salt and pepper to taste. More olive oil can be added if necessary. |
