Directions
In various African countries, including Morocco, it is customary to enjoy flavored shortbread cookies with tea. These cookies are typically round and go by several names like Ghriba (circular), Ghoriba, Ghorayeba, and Ghoraiba, among others. While they are thought to have originated in Egypt, you can find these circular cookies in many countries today. There are even more recipes for Ghriba than there are name variations! Like any beloved traditional dish, each home cook adds their own unique touch. You can include ingredients like walnuts and sesame seeds and enhance flavors with orange blossom water, lemon zest and vanilla.
In this recipe, we will focus on an all-almond version of these cookies. They are incredibly delicious—crispy on the outside and soft and chewy on the inside, with a wonderful flavor. I highly recommend you give them a try!

Melt the ghee and let it cool. Use a fork to whisk the egg whites until they are slightly runny. |

In a separate bowl, combine the almond flour, salt, corn starch, caster sugar and baking powder. Mix it all together until it's smooth. Next, add the ghee, egg whites, and apricot jam, and quickly knead the mixture with your hands until it forms a soft, uniform dough. |

On a plate, sprinkle some caster sugar. Take portions of the dough and roll them into balls about 3 cm in diameter. Coat each ball in caster sugar and arrange them on a baking tray lined with baking paper. Gently flatten each ball with your hand to create a round disk about 1 cm thick. |

Next, place the cookies in the oven and bake them for 15 minutes. As they bake, they will turn a lovely golden color. Once they're done, remove them from the oven and let them cool a bit on the tray. After that, move them to a wire rack to cool completely. And there you go! They're perfect to enjoy with tea or coffee. |
