Strawberry Gazpacho I first tried strawberry gazp Strawberry Gazpacho
I first tried strawberry gazpacho in a restaurant in Portugal, so despite the Spanish origin of the soup itself, I associate it with a summer in Lisbon.

The “strawberry” version may surprise you, but strawberries work beautifully and in a very unusual way in this spicy summer soup.

Exactly what you need on a hot summer day!

Ingredients:
Vegetables:
500 g Fresh tomato
200 g Strawberry
100 g Paprika red

French Invisible Apple Cake with Austrian Twist. French Invisible Apple Cake with Austrian Twist.
Invisible Apple Cake is a recipe that originated in France and quickly became popular on the Internet. Its uniqueness lies in the large amount of apples sliced into paper-thin pieces and the minimal amount of batter. Hence the name “Invisible Cake”: there is so little batter that it seems as if the cake is made entirely of apples.

In terms of texture, this cake is somewhere between an apple clafoutis, a very delicate charlotte, and baked apples with vanilla custard. The texture is not dense but soft and tender, almost like a pudding, so do not expect a traditional cake.

The cake can be baked in a loaf pan for a taller result or in a wider round pan for a flatter cake, which tends to bake more evenly. For a more intense flavor, you can add apricots cut into small cubes (Austrian twist😀), or make the classic version using only apples. I also like to sprinkle the cake with roughly chopped hazelnuts 10 minutes before the end of baking—the combination works beautifully. You can also use sliced almonds or leave the topping off altogether.

Ingredients:
Fruits:
750 g Apple
250 g Apricot
Dry Ingredients:
70 g All-purpose gluten-free flour
1/2 tsp Baking powder
80 g Sugar white
pinch of Salt
Wet ingredients:
2 Egg(s)
70 g Coconut milk
30 g Coconut oil
Topping:
50 g Hazelnut

Juicy Chicken (or Turkey) Breast for Deli-Style Sa Juicy Chicken (or Turkey) Breast for Deli-Style Sandwiches.
Finding new recipes for a tasty and healthy breakfast with enough protein is an ongoing quest, so I’m always excited when I discover successful recipes that help diversify our meals. This idea came to us during one of our trips when we bought ready-made roasted poultry breast and used it to make sandwiches on whole-grain gluten-free bread, spreading it with cream cheese (or mayonnaise) and adding lettuce and vegetables. The result was a delicious, healthy, and satisfying breakfast that could be assembled very quickly. After returning home, I experimented with different ways of roasting the meat until I achieved the same juicy and flavorful result, but without the preservatives and flavor enhancers commonly found in store-bought versions. Everyone enjoys these sandwiches! They also make a great school snack. Highly recommended!

This method works equally well for both chicken breast and turkey breast. I’ll provide roasting times for both options in the recipe.

To achieve a juicy roast that can be sliced like deli meat, it is important to follow all the steps in the recipe, including brining, wrapping, low-temperature roasting, checking the internal temperature, and chilling in the refrigerator.

Ingredients:
1 kg Chicken breast
Brine:
1 l Water
60 g Salt
15 g Sugar white
1 clove Garlic
2 Bay leaf
3 Pimento
10 Black pepper whole
1 Clove
Marinade:
1 tbsp Extra Virgin olive oil
1/2 tsp Garlic powder
1 tsp Dijon mustard
1 tsp Smoked paprika
1/2 tsp Grounded black pepper

Gluten-free French Sablé cookies. This is an adap Gluten-free French Sablé cookies.
This is an adaptation of the classic French Sablé cookie recipe for a gluten-free diet. The butter used in the traditional version has also been replaced with ghee in the appropriate proportions.

These are simple cookies that can be made with children. They turn out wonderful—very crisp and melt-in-your-mouth, with hints of lemon and vanilla. We decorate these cookies with sugar icing and candied fruit, but this is entirely optional.

Enjoy!

Ingredients:
