This year's Xmas markets in Vienna have been opened since 12 of November! And this is a time of hot punch! Mulled wine (Glühwein) is in Germany, Vienna is all about punch of different kinds!
Today we make Cider punch, like they serve near to Karlskirche in the center of Vienna!

By the 19th century, Chili con Carne started to be sold on the streets of Texas and gradually gained popularity as a street food. Back then, the dish mainly consisted of meat and chili.⁠

As time passed, the dish evolved, replenishing with new ingredients like beans, tomatoes, carrots, onions and added spices.⁠

It’s a variation of the well known American Coleslaw to which we will add red seaweed. It’s even got a fancy name, Dulse Slaw. Dulse is a type of red seaweed with dense, broad leaves that have a perfect texture and flavor for cabbage. You can buy this seaweed dried, salted, or fresh. Dried seaweed will expand in volume by 2 or 3 times when soaked. Salted seaweed also requires soaking in cold water to remove excess salt. ⁠

Coleslaw is traditionally made with mayonnaise, so we will use a homemade mayonnaise made with either olive oil or avocado oil.⁠

Liver with Apples, AKA Leber Berliner Art.⁠
I won’t get tired of saying, “Liver (and other organs) is a superfood!” Liver with apples has long been a part of Ukrainian cuisine, but if you dig a bit deeper, this dish came to us from Germany, as Leber Berliner Art translates to Berlin Style Liver. Classically German dishes are cooked of veal liver, coated in flour and fried quickly. Then, they saute onions and apples cut into rings in the same pan.⁠
⁠
We will make, naturally, a gluten-free version of the dish. We won’t add sugar instead, we will caramelize the onions well so they will give just enough sweetness. Plus, we will change the order of sauteing. Onions come first, then apples and then liver at the end. There are two reasons for that. An aesthetic one, if you saute the apples and onions after the liver, they will look “dirty” because of the bits of liver. The second reason is the temperature. It’s nice when the liver is hot while the onions and apples are warm, not the other way around.⁠
⁠
It takes very little time to make the dish, yet the combination of flavors is magnificent! You can use either veal/beef or chicken liver if you like. Also, you can use pork, rabbit, lamb liver, etc.⁠

All the ingredients in classic chashushuli are only stewed, no searing or other high temperatre cooking methods.⁠

Another interesting fact about chashushuli. It doesn’t use any broth or water needed, onion releases its juices which meat is stewed in. That’s why it’s important to use equal parts of onion and meat! ⁠
