Quinua con Leche is a traditional Peruvian quinoa-based dish made with milk. It is nutritious and simple to prepare a dessert or a sweet breakfast option akin to rice pudding. It is well-liked not just in Peru but also in other Andean nations like Bolivia and Ecuador, where quinoa is seen as a significant element of the traditional cuisine.⁠

Quinoa has been around since the Inca civilization, which referred to it as the ‘mother of all grains’. Historically, quinoa has been a staple food for people living in the highlands of Peru and Bolivia because it’s well adapted to the harsh climate of the Andes.⁠

Quinoa is packed with protein, fiber, iron, and a whole host of vitamins. While the traditional Quinua con Leche is typically made with sugar and milk, we are going to create a healthier and even tastier version using coconut milk, nuts and dried fruits. In Austria, potato fritters are called Erdäpfelpuffer (or German version – Kartoffelpuffer) and a similar dish made of pumpkin is called Kürbispuffer. That’s what we’re going to make for breakfast today. Gorgeous taste, you should try it. It’s in season right now!⁠
Naturally, we are cooking a gluten-free version for which, in this recipe, any flour will do, such as whole-grain rice, amaranth, buckwheat, sorghum, chickpea and even almond flour. Try different options, the one pictured is with amaranth flour.⁠
I use Hokkaido pumpkin, it cooks quickly and can be used with the peel.⁠

Such a wonderful autumn dish! It features a variety of flavors and it’s so healthy!⁠
I recommend you try it even if you’re not a huge fan of pumpkin. In this risotto, pumpkin flavor is balanced out with fresh chives, crispy pumpkin seeds with a nutty note. It’s deciduous and exceptionally good-looking! ⁠
I use Hokkaido pumpkin but you can use other types too. Just make sure to bake it until soft and peel the skin. ⁠

In this case, you will use more broth and it’s crucial that the broth remains clear. Alternatively, you can go for a German or Austrian Sulz-type dish, where the solid ingredients take center stage and the jelly just keeps everything together.
