Berry Panna Cotta can be made with any berries, even frozen ones if you want such a dessert in winter. Delicious, it comes from black currants or a mix of black and red currants, also from blackberries and blueberries, raspberries, strawberries or a mixture of all the above berries, improvise! The color will depend on the combination of berries that you use. If you are making it with berries that have little acid, like blueberries, then add a little lemon juice when you cook the berries. Leave some berries for decoration.⁠

is a great choice both for a quick weekday dinner and a festive meal. In this recipe, we’re sharing a basic technique for cooking it, but you can always marinate the meat in advance or brine it for deeper flavor.⁠

Properly cooked tenderloin should have a golden-brown crust on the outside and remain tender, juicy, and slightly pink in the center. Don’t fear the pink — it’s a sign of perfect doneness, as long as there’s no blood. This result comes from precise oven timing, so a meat thermometer is a must.⁠

Once the internal temperature of the thickest part reaches 63–65°C (145–149°F), remove it immediately from the oven. At 70°C (158°F) and above, it becomes dry and loses its ideal texture.⁠

Cooking takes just 15–20 minutes, which makes this recipe very convenient. We highly recommend practicing it and adding it to your family’s cooking rotation.⁠

These are exceptionally tender, crumbly, golden shortbread cookies. This is my own gluten-free version of a classic cookie my mom used to make with mayonnaise—it was my favorite growing up. If you prefer, you can substitute the mayonnaise with egg yolks, but it’s the mayo that gives the cookies their unique flavor.⁠
The cookies can be made vanilla-flavored (as in this recipe), or with orange or lemon zest for a citrus variation.⁠

To achieve a beautiful golden color, the recipe includes yellow corn flour.⁠

This layered dish is made of fried vegetables — eggplant, potatoes, and bell peppers — baked in a rich tomato sauce either in the oven or on the stovetop. It represents the island’s summer harvest and has a deep, rich flavor thanks to the olive oil and tomatoes.⁠

You might think it’s a simple dish, and in theory it is — but once you factor in making the tomato sauce (or using store-bought), frying all the vegetables (we grill the eggplants instead), layering them, and baking it all — I’d say the idea is simple, but the execution takes time. That said, the result is absolutely worth it! Make a big batch — Tumbet is delicious both hot and cold.⁠

Tiramisu – beautiful, beloved, and long out of reach for me in its classic form.⁠
Too many elements of this dessert need to be just right – crisp and airy savoiardi, silky mascarpone cream, and strong, aromatic coffee. Out of all that, I am able only to consume the coffee 🙂⁠
However, quality gluten-free savoiardi have gradually appeared on the market, and I discovered an amazing dairy-free mascarpone recipe.⁠
From there, everything follows the traditional tiramisu method.⁠
Let me tell you – the result is more delicious than most tiramisus you’ll find in restaurants outside of Italy. And considering that this version is both gluten-free and dairy-free, it’s nothing short of fantastic.⁠

Vegan Mascarpone.⁠
Classic mascarpone is an Italian creamy cheese originating from Lombardy, especially popular in the Milan region and surrounding areas. Unlike hard cheeses, it is neither aged nor pressed. Mascarpone is made from cow’s cream with a fat content of at least 35%, and a souring agent such as lemon juice, vinegar, or tartaric acid is used for thickening.⁠
⁠
To make mascarpone, the cream is first heated and then mixed with the acid. The mixture is left to cool at room temperature, and then placed in the refrigerator for about 8–12 hours to fully stabilize. The thickened mixture is transferred into cheesecloth or a dense fabric and left to drain for several hours (sometimes up to a full day). The result is a thick, smooth cheese.⁠
⁠
We prepare vegan mascarpone using the classic technique — but without dairy. Instead of cream, our base is a mixture of soy milk and yogurt combined with full-fat coconut milk. This gives us the proper ratio of proteins and fats to achieve the ideal texture and flavor. The result is very similar to traditional mascarpone — and the tiramisu made with it is even more delicious.⁠
