Here is a universal, basic formula for blini batter with milk. It makes the most thin, tender and delicious blini, in a word, right.

Formula (1-2 portions):
85 g flour
1 egg
250 ml milk
1 tbsp butter
pinch of salt
1 tbsp sugar (for sweet blini)
Preparation:
The ingredients should be of room temperature. Cool the butter after melting.
Whisk the eggs with a fork until smooth. Add 1/3 of milk, combine, incorporate thr flour, salt and sugar, combine until lumpless and smooth.
Add the remaining milk and combine until smooth.
Incorporate the melted butter and combine until smooth.
Let the batter stand at room temperature for 1 h or overnight in the fridge.
Adjust the consistency by adding milk because the batter will be quite thick after the rest.
Fry blini in a hot pan over medium heat.
