Directions
Watermelon and feta salad is a dish of the end of August, the time when heatwaves come to an end and ripe watermelons are sold at markets.
It seems quite unusual, but indulge yourself in it and try! It’s refreshing, sour sweet, freshly mint with salty notes of feta. Exactly what you need in a hot day!

Place a watermelon in the fridge for a while before you start cooking to make your salad even more refreshing.
Red onion would look more eye-catching in this salad.
It’s not necessary to marinate sweet Crimean onion in lime juice. Cut and add it at once, and use lime juice as a dressing.

Cut the limes in half. Cut a few thin slices and set aside for garnish. Squeeze the limes in a bowl, add 0.5 tsp sugar and mix. |

Cut the onion into thin, almost transparent slices. |

Add the onion slices to the lime juice. Now let it marinate for a while to get rid of bitterness. |

Meanwhile cut the watermelon pulp into large triangle pieces (3-4 cm in size). Place to a large serving bowl. |

Cut the feta into medium sized cubes (1-1.5 cm) and add to the serving bowl. |

Cut mint into stripes, save some leaves for garnish. Finely chop parsley. Sprinkle over the watermelon and feta. |

Remove the onion from the lime juice, squeeze slightly. Arrange on top of the watermelon and feta. |

Season with salt, pepper, dress with olive oil and the lime juice to taste. If the watermelon isn’t sweet enough, add 0.5 tsp sugar. |
