As I often travel for work, I have to stay in hotels. Almost always scrambled eggs are offered for breakfast. I take them pretty much never as they don’t usually look delicious. And I was always wondering, why are scrambled eggs so popular? But then I learned to cook them.

Scrambled eggs turned out to be most tender dish, that perfectly goes with a plenty of delicious things as smoked and salted fish, fresh and grilled vegetables, toasts, greens, spinach and many others. If properly cooked and beautifully served, scrambled eggs can turn your breakfast into a holiday. And you know, this dish has nothing to do with the dish served for breakfast in hotels.

Whisk eggs until smooth.

In a pan, melt butter over gentle heat. Add eggs.

Important!
Eggs should be cooked over gentle heat as they are not supposed to be fried, but kind of stewed and gradually thicken while cooking. There is another option of cooking over a steam bath, but it is much easier and quicker to cook using a heavy-bottomed pan and keeping an eye open for heat intensity.

You should stir eggs constantly to keep them from burning and allow them heat evenly. If you notice eggs start burning or something, remove them from heat, stirring constantly, then reduce heat and return eggs to the stove in a minute.

Continue stirring. At the beginning eggs are thin, but then they gradually start thickening. If eggs are straight from the fridge, the process takes about 7-10 min, if they are at room temperature – about 5-6 min.

When eggs are almost set, but still somewhat creamy, add cream, stir and cook for another 1-2 min until they are completely set.

If you like thicker eggs, cook, stirring, for a few minutes more until desired consistency. But be careful - don’t overcook them.

How to serve:

Serve and cook immediately. As 5 min after removing from heat, the top layer will dry a little and won’t be perfect anymore.

You may serve scrambled eggs with grilled tomatoes for breakfast. Heat some oil in a regular or a grill pan over high heat. Cut cherry tomatoes in half and place cut side down on a pan. Cook for 30 sec. until cut side is done.

Another great option to go with scrambled eggs are slices of bread toasted in oil.

How to keep:

Eat immediately as scrambled eggs are not supposed to be kept.
