Classic gluten-free pancakes – beautiful golden thin pancakes based on millet and oat flour – are one of my favorites.
Millet oat crepe have golden color, they are gentle and have reach taste. They can be served both sweet and savory with different fillings.
You can also take this recipe as a basis and experiment with other flour.
Pay attention to the gluten-free tag on oat flour package when buying!

All ingredients should be of room temperature. |

In another bowl whisk the eggs with a fork until smooth. Add almond milk, mix well. |

Let the batter stand at room temperature for 30 min or overnight in the fridge. |

Adjust the consistency by adding warm water or milk because the batter can be quite thick after the rest. |

Fry crepe in a hot pan over medium heat. Serve with jams, fruits, honey. Bon Appetite! |
