Directions
These whey blinis are a favorite of our family probably because of their pleasant and a slightly sour flavor. They taste incredibly delicious either with or without fillings or toppings. They taste wonderful with jams or conserves as well as with savory fillings such as meat or mushrooms. And particularly delicious the blinis taste if filled with red caviar or salted/smoked salmon.

Heat up whey to approx. 40 degrees Celsius. |

Whisk eggs with salt and sugar using a wire whisk or an electronic mixer at low speed. |

Mix in whey. |

Add flour and whisk until smooth (until lumps are gone) using a wire whisk or an electronic mixer at low speed. |

Add oil and mix with a spoon. |

Cover and let stand in a warm place for 30 min. |

Heat a frying pan over medium heat and ladle some batter into the pan, tilting the pan to move the mixture around the pan. If you use a non-stick pan, then you don’t need to grease it as our batter have oil in it. How to serve: Pile the blinis up and serve right after they are done. How to keep: When the blinis cool, you can cover them with a plastic wrap and keep on the table for one more day. Warm them up before serving or roll in the filling and heat them up in some butter.
