Directions
Frittata is an Italian omelet. It can be cooked either of eggs and cheese or with additional ingredients such as vegetables, seafood or ham. Frittata is usually cooked in a pan with high sides and it should be no less than 1.5-2 cm thick. Frittata is first fried covered over low heat or medium heat, then turned over and fried uncovered.
The most famous frittata is the one with potatoes. However, today I suggest you cook frittata with cauliflower. The dish or easy to cook and healthy to eat!

Cut cauliflower into florets and boil for 3-5 min in slightly salted water. |

In a medium pan, cook boiled cauliflower over high heat until gold (3-5 min). |

Finely grate cheese. |

In a big bowl, mix eggs with a fork until smooth, but don’t whisk them as we don’t need a foam to form (excess volume during makes an omelet flat when cooled). |

Add salt, pepper, grated cheese, cauliflower and mix. |

Heat some vegetable oil in a medium pan (23-24 cm in diameter) over low heat. Pour the mixture into a pan. Omelet should be 2-3 cm thick. Cover and cook for 8 min. |

When the omelet is set and the bottom is brown, tilt the pan backwards and forwards to keep it from sticking. |

Turn the omelet over: take a flat plate of a bigger diameter and cover the pan. Then holding them firmly, turn the plate and pan over. Let the omelet uncooked side slide down into the pan. |

Cook uncovered for 8 min. How to serve: Serve hot garnished with herbs or sour cream. How to keep: It’s better to eat it immediately, but you can keep it refrigerated during a day and serve cooled and cut into pieces as a snack. |
