This is a very easy and tasty idea for a quick lunch or dinner. The breasts cook up so incredibly tender with a crispy fragrant crust. Parmesan adds balance to the taste, breasts are enough salty, slightly sour, and have a citrus fragrance because of lemon zest.

If you are imagining a hard crust of melted cheese, it’s different here, it’s crumbly and very crispy!

The crust ingredients can be prepared beforehand and stored in a fridge until the dinner time: simply coat the breasts and place in the oven to bake. In 20 min you will have a wonderful dinner.

Steps

1
Done

Preheat the oven to 190C.

2
Done

prepare crust

Finely grate the parmesan. You should end up with approximately 1 cup of shredded cheese. Finely chop the chives. Melt the butter.
In a bowl, mix together breadcrumbs, parmesan, chives, salt, pepper, and butter. Combine to get the consistency of wet sand.

3
Done

prepare breasts

Remove the tenders – we are not going to use them in this recipe. Grease the baking pan with olive oil, arrange the breasts 2-3 cm apart from each other. Place the parmesan mixture in a thick layer (5-7 mm) on the top of each breast. Press slightly.

Done
20 min

bake

Bake for 20 min (time is given for the medium breasts, please adjust for the size) at 190C until the crust is golden brown.
Take out and serve right away. Garnish with chopped parsley and drizzle with some lemon juice, if desired.
Enjoy!
