This recipe makes creamy yogurt jelly as tender as cheesecake but without a crust. I got the idea of making this jelly from the recipe for blini cake with yogurt jelly. Sometimes I make the cake, and sometimes only the jelly. It’s a simple, healthy and delicious treat. It’s perfect for breakfast and dessert.

My recipe uses classic Philadelphia cheese and Greek yogurt, so the dessert has such a soft and silky consistency, although quite high in fat. If you want the jelly to be lower-fat, use any combination of cream cheese, sour cream, and yogurt, or only yogurt with suitable fat content for you. You will have to increase gelatin ratio though, and the consistency may be slightly different – thicker and more jelly-like. But still very delicious!

bloom gelatin

Cover the gelatin with cold milk and let bloom according to the package instructions (usually 10 min).

Prepare yoghurt mixture

Combine together yogurt, Philadelphia cheese, confectioner’s sugar, and vanilla sugar until smooth.

Dissolve gelatin

Place gelatin and milk over heat. Mix until dissolved. Don’t let it boil!

Incorporate gelatin

Add a few tablespoons of the yogurt mixture to the gelatin mixture. Mix until smooth. Then add it to the remaining yogurt mixture and mix well.

Make jelly set

Add the berries and mix carefully to distribute them evenly. If you making jelly only with yogurt, the mixture must be still quite runny. Wait for it to start thickening before adding berries. Divide the mixture into ramekins, smooth the surface. Refrigerate until set for at least 2 hours. Done! Enjoy!
