250 - 300 g berry (blueberry or any other berry (fresh or frozen))

1 tsp vanilla essence (1 package vanilla sugar)

1 tbsp rum

If you want to provide an impression at breakfast these crepes are exactly what you are looking for! This exquisite dish is a combination of cool and fresh yoghurt with a tender crepe and hot fragrant berry sauce with a slight scent of rum.
This is probably one of the best dishes for a romantic breakfast. This dish sets he mood and accents your cooking skills.

The cookware you will need: A stainless steel pan 8 wooden sticks (tooth picks) |

Make crepes using your favorite recipe. This is my favorite recipe, but you may like milder flavor of these crepes more. |

To yoghurt, add vanilla essence and 1 tsp sugar. Mix together. Yoghurt should be almost unsweet. Add fresh raspberry and mix. Juice will escape and yoghurt will turn pink. |

Now let’s prepare berry sauce. In a stainless steel pan, add berries, 3 tbsp sugar and cook over medium heat stirring occasionally. Juice will escape, sugar will dissolve. Cook until sauce becomes thicker. Remove from heat. |

Let’s prepare crepes meanwhile. Place a crepe on a plate, add ¼ yoghurt in the center and close a crepe to form a pouch, use one 1 or 2 wooden sticks to hold it together. Place crepes on serving plates. |

Proceed to flambéing berries in sauce. Pour rum in a table spoon, light on fire and pour over berries. Allow the flames to burn off. Top crepes with sauce and serve. How to serve: Top with sauce right before or while serving. How to keep: Not supposed to be kept. |
