2 large sweet potatoes

100-150 g soft goat cheese, slightly salted

Directions
The sweet potato turns out to be a liana rather than a potato. It was a surprise for me, as it resembles a regular potato so much! However, the taste and colour of tis incredibly interesting and orange vegetable is perfectly paired with salty cream taste of soft goat cheese. If baked together until crusty and brown…yummy!
Baked sweet potatoes with goat cheese is a perfect dish for parties and friends’ meetings – it is easy, not troublesome at all, but fancy and absolutely delicious!
If you are not a goat cheese fan, use mashed cottage cheese with some salt – this is another equally delicious variation of this dish usually made by my mom.

Preheat the oven to 180 degrees Celsius. |

Wash the sweet potatoes and pat dry with a kitchen towel. |

Cover the baking pan with a cookie sheet and bake the potatoes. I recommend you use a cookie sheet as the sweet potato release much juices while baking. |

The baking time depends on the potatoes’ size and temperature (if right from the fridge they be baking longer), and the temperature in the oven. It varies from 30 to 60 min. Check the sweet potatoes for doneness with a fork – when they are done, the fork will slide easily. |

Remove from the oven. As the potatoes are hot, use an oven cloth to hold the them while cutting lengthwise. |

Mash the insides of each potato with a fork. Add some butter, salt, pepper and mix. The butter will melt. |

Add soft goat cheese on top of each potato. |

Preheat the oven to a maximum temperature. |

Put the potatoes back in the oven for 7-10 min. The potatoes are done as soon as the cheese got baked. How to serve: Serve piping hot. Eat by scooping the insides with cheese or by cutting the potato together with the skins (which got well caramelized, by the way) into pieces. How to keep: A baked sweet potato can be kept refrigerated for 1-2 days, then you may just warm it up in the oven, cut lengthwise and then bake with goat cheese added. |
