Today we’re going to make one of the most famous Bavarian cake — Zwetschgen Datschi. It’s a seasonal plum cake for which plums are arranged on top of a thin layer of dough and topped with streusel (crumble topping). The cake is baked until the topping is crisp. 

It’s a super fruity, colorful, and delicious cake that’s so easy to make at home. It’s a gluten-free variant that gives the original gluten one a good run for its money.

Mix together the dry ingredients for pastry using a whisk. In a separate bowl, mix the egg and warm plant-based milk.
Add the wet ingredients to dry ones and mix until smooth. Let it stand for 15 min to thicken.

Cut the plums in half, remove the pits. Now you have a few options: leave the halves whole or slice each half into 2 or 4-6 segments without breaking the skin. Cut however you like, really. Just make sure they are evenly arranged on top of the cake and look good.

Cover the baking pan with parchment paper. Flour your hands with rice flour and transfer the dough to baking pan spreading it out with your fingers. It should be about 4-5 mm thick and cover approximately ⅔ of pan. Let it stand for 10 min.

Arrange the plums on top of dough in rows, slightly overlapping.

To make streusel, mix together the flour, oat flakes and sugar with a whisk. Place the coconut pieces in the center and rub it into flour mixture with your fingertips to make breadcrumb texture.
Evenly sprinkle the streusel over the plums.

Bake in the preheated oven for 30 min at 190 degrees. The bottom will get slightly brown. Take out and let cool down. Serve warm or at room temperature.
Streusel gets softer on next day, so it’s better to eat the day it’s baked.
