1 kg of White radish
1/2 an Onion You can also use green onions
250 g of Coconut yogurt

1 tbsp. of Lemon juice to taste

My aunt always made this kind of salad in the winter. I remember very well its soft and at the same time, crispy consistency and fresh, slightly tangy taste balanced by a sour cream sourness.

By the way, every time I write down a recipe from my childhood, I note how healthy and diverse my diet really was and still is. Owing to the ingenuity, curiosity and culinary skills of my mother and both my grandmothers and aunts, I tried different dishes. We always had plenty of vegetables, even in winter, different kinds of meat and various by-products. So I’m very lucky! Thank you, love you!

This salad is one healthy answer to the question of how to include vegetables in your diet if you don’t have the usual greens, tomatoes, peppers, etc.

Radish is a root vegetable of the cabbage family, which means improvement of detox! Naturally, it contains many different vitamins, so necessary in winter, such as vitamins of the B group, C, E, beta-carotene, potassium, magnesium, calcium, etc. In ancient times, radish was considered a medicinal plant. That’s something worth taking heed of!

P.S. The photo shows a mix of white and pink radishes. You can also use black radishes or also add small radishes and kohlrabi.

Peel the radish and grate it on a coarse grater. Finely chop the herbs. Then slice the onion into thin half rings or dice it. Place all the ingredients in a bowl and season them with salt and pepper. Add lemon juice and mix them all. Now, serve! Bon Appetit!
