90 g of Cashew butter Or almond butter
50 g of Ghee Or coconut oil
4 Egg(s)
Dry ingredients:
50 g of Coconut flour
1 tsp. of Baking soda
1 tsp. of Baking powder
1 tbsp. of Ground cinnamon
1/4 tsp of Clove
1/2 tsp. of Salt

If you want to make the most healthy yet delicious cake, it’s a super option!  Just a word of warning, it’s not as sweet as regular cupcakes.  Because we don’t add sugar to the dough, the sweetness of this cake is exclusively from the sweet potatoes, coconut flour and nuts.  Therefore, it is sweet, yes, but not very.  So, I would describe it as something between dessert and bread.

For all its usefulness, the cake, as you can see in the photo, turns out to be very lush, tender and tasty.  It has everything you need, which are proteins, fiber, healthy fats, and there is nothing that is not needed :), which are sugar, dairy products and flour.

And it’s easy and quick to cook!

Preheat the oven to 175 degrees Celsius.

Peel the sweet potatoes, cut it into 5 mm thick plates, put into a pot, fill it with water and just cover it. Bring to a boil, cook the sweet potatoes until soft (about 5 minutes). Drain the water, knead the sweet potatoes into homogeneous mashed potatoes. Let them cool down.

Melt ghee (or coconut) oil and let it cool down.

Whisk all dry ingredients together in one bowl until homogeneous.

In another bowl, stir the eggs until smooth. Add the mashed sweet potatoes and melted ghee (or coconut) butter and mix until homogeneous.

Mix the dry ingredients in portions. The dough should be homogeneous and medium dense.

Place the dough on a baking paper-covered sheet and bake at 175 degrees Celsius for about 60 to 70 minutes.

Take out the ready cake, let it cool down on the sheet for 5 minutes, then take it out of the sheet and let it cool down completely on a wire rack.

Store the cake wrapped tightly in a food plastic wrapping at room temperature.
