800 g Green peas young fresh or frozen
4 tbsp Mint fresh chopped
zest of 1 Lime or lemon
1 medium-sized Onion
1.5 l Almond milk
1 tbsp Almond butter или больше
to taste Salt
to taste Grounded black pepper
leaves Mint fresh for garnish

This is an incredibly tender and fresh soup – ideal for spring and summer time, even though it’s served warm. Pea & mint soup should be very smooth and thin. It’s so nicely green in color, and fresh (thanks to peas) and just slightly sweet in taste with mint adding an extraordinary tone to it.

This soup can be also served almost cool in small glasses as appetizer.

It’s very easy to make, and you can use fresh and frozen peas as well. However, mint should be fresh. It takes only 25 min to make! (including  ingredients preparation).

prepare vegetables

Cut the onion into small cubes. Chop the mint leaves. into thin strips.
Heat the oil in a pot. Add the onion and cook over low heat until transparent. Add the mint and cook for 30 sec. Then add the peas and cook for 5 min.

Prepare SOUP

Add the almond milk and bring to a boil over high heat. Then cook until the peas are tender yet still bright green (no more than 5 min). Remove from the heat and let cool down.

Blend

Transfer the soup to a food processor. Add the finely grated lime zest, almond mousse, salt and pepper. Blend to create a very smooth texture. Add some more salt or pepper, if needed.
Serve warm.
