These cookies are amazing and very unique. They aren’t crispy but sort with a very tender texture.

It’s easy, healthy and light. Besides, instead of sugar, this recipe uses agave syrup.

Try these soft chocolate chip almond cookies, I adore them! They are also ideal with red wine ?

Explanations:

Almond flour is much finer than ground almond. You can buy it online or in stores in a dietetic department. You can also make it yourself by grinding raw peeled almond in a coffee grinder or food processor.

I chose grapeseed oil for its neutral taste but you are free to use coconut or any other plant-based oil to your taste.

P.S. For dairy-free version use dairy-free dark chocolate.

Preheat the oven to 175 degrees.

Coarsely chop the chocolate.
In one bowl, combine together almond flour, salt, and baking powder. In another, combine together the oil and agave syrup using a whisk.
Add the wet ingredients to the wet ones, and stir with a spoon until smooth. Stir in the chopped chocolate.
Form 3cm balls, gently flatten them and arrange on the baking sheet lined with parchment paper.

Bake for around 10 min. The cookies will get golden and slightly brown on edges.

Take out and let cool in the sheet. They are still soft, so don’t touch them. They will get more solid as they cool, then you can transfer than to a wire rack.
Serve slightly warm or completely cool. They keep well for a couple of days uncovered.
Ideal for tea, coffee, and wine.
