I found this recipe in a book by a famous French chef Michel Roux.
When I made them for the first time, I was impressed by their silkiness and milky flavor. I would characterize them as exquisite.

In a big bowl, sieve flour, add salt and powdered sugar. |

Preheat a pan, grease with ghee and cook over medium heat. How to serve: While crepes are still hot, you may coat each crepe with batter, sprinkle with sugar and fold into quarters. You may also fill them with different fillings to your taste or serve with honey or conservatives. How to keep: Can be kept refrigerated and wrapped in plastic wrap overnight. |
