Sangre in Spanish means blood. It is to this word that the famous red wine drink owes its name, Sangría. Classic sangria is made from red wine with summer fruits and water. It is also accompanied by brandy or cognac. In modern bars and restaurants, sangria has moved into the category of fashionable cocktails. You can find its different variations with syrups and a variety of spirits and exotic fruits. We’ll make a classic, refreshing sangria and then you can use it as a base for experimenting with other ingredients.

In a small saucepan, heat 100 ml of water with one cinnamon stick and brown sugar. When the sugar dissolves, turn it off and let it cool.

Wash the fruit thoroughly. Remove the seeds from the apple, peaches and pears, leaving the skin. Then cut them into large pieces. Cut the orange and one lemon into slices. Squeeze the juice from the remaining lemons and carefully peel off a couple of zest strips with a vegetable peeler. Place the fruit in a large glass bowl, pour the lemon juice over it and stir. Add the sugar syrup and cinnamon, brandy if you are using and wine and stir to combine. Place the container in the refrigerator for at least 2 hours (2 to 4 hours is best) to combine the flavors of the wine and the fruit.

Before serving, add cold sparkling water. Taste, add some water or sugar to taste if necessary. Serve in a pitcher with a wooden spoon to stir the fruit. Ice can be added to glasses.
