Light, quick, healthy and a very interesting salad at the same time! The salad melts in your mouth with crunchy fresh lettuce leaves, crunchy nuts, greens, and sweet orange slices. The most exciting thing is the dressing based on orange juice! Take note!

Cut the lettuce leaves into large chunks. Roast the walnuts, let them cool and chop them coarsely. Chop the parsley greens into medium pieces. Put everything in a bowl.

Filter the orange and add the orange slices to the bowl with the rest of the ingredients. Squeeze the juice from the remaining pulp into a saucepan. Bring it to a boil and let it simmer for a while to thicken the juice and make it more concentrated. There should be about 1.5 to 2 tbsp of juice left.
Pour it into a bowl, let it cool, add olive oil, salt and pepper, and mix until an emulsion is formed. Taste the dressing, adjusting the salt and sweetness.
Season the salad just before serving.
