Cauliflower purée has become a popular healthy diet dish. However, the Internet suggests a quite simple version, boil the cauliflower and grind it into purée. That’s fine, but in taste and consistency, this dish will still be just mashed cauliflower.

However, you and I are professionals and originals :), so we make cauliflower purée on a whole other level!

It resembles the taste and consistency of mashed potatoes, loved by many from childhood, while its composition is, to put it mildly, healthier! It contains everything, proteins, healthy fats and vitamins.

The puree is easy to make and stores well in the fridge.  It’s the perfect side dish!

Cut the cauliflower into florets of the same size and boil them in salted water until soft.
For this dish, we need to boil the cauliflower exactly until soft, that is, longer than usual. There shouldn't be any crunch, florets should be soft. Drain the water, leaving about 1 cup of water.

Boil the eggs to a hard boil. Then melt ghee butter.

Place the cauliflower in a saucepan, add 1/2 cup of the liquid, boiled eggs (you can chop them coarsely or leave them whole), ghee oil and almond butter. Then, grind everything with an immersion mixer until the perfect homogeneous consistency that resembles mashed potatoes. You can add a little more liquid to the mixture if the consistency is too thick. Taste it and add salt to taste.
