700 g of Minced beef
1/2 cup Brown rice
1 Egg(s)
1 bunch of Parsley leaves
1 Onion
2 cloves of Garlic
to taste Salt

2 tbsp. of Extra Virgin olive oil
Sauce:
400 g of Italian canned tomatos
1 Celery rib
1 stalk Celery leaves
1 Bay leaf
1 Onion
2 Pimento
1 tsp. of Basil Dried basil
to taste Salt
to taste Grounded black pepper
2 tbsp. of Extra Virgin olive oil

Everyone wants quick, delicious and healthy recipes. That’s just one of those!

Meatballs are a dish familiar to many and loved since childhood. We modify the recipe a little bit and make it healthier, more flavorful and easier to prepare! Here is how we do it:

  • Add whole-grain rice instead of white rice or even a mixture of whole-grain and wild rice.
  • Add lots of fresh herbs to the stuffing to make the meatballs very juicy.
  • Add spices to the minced meat and sauce. Here everything is to your taste. I wrote down one of my mother-in-law’s options, which is our favorite.
  • Let’s bake the dish in the oven and not stand over the stove.

It is super fast and the whole family will be happy plus healthy food!

Rinse whole-grain rice and boil it until it is 2/3 done for about 15 minutes in salted water. Rinse ready rice under cold water.
Dice onion into small cubes and chop greens finely.

Preheat the oven to 200 degrees with convection or 220 degrees top-bottom.

Mix minced meat, rice, spices and herbs together and form round meatballs. Grease a baking dish with olive oil and place the meatballs in it. Then pour a little olive oil on top and bake them in the oven for about 30 minutes. The meatballs should be lightly brown.

For the sauce, dice the onion finely. Then dice celery into small cubes and chop celery leaves finely.
Heat olive oil in a little saucepan, add onion and celery and sauté over medium heat until transparent for about 10 minutes. Add the tomatoes, crushing each one beforehand in your hand and pour the juice they were in also. Then add all the spices, season with salt to taste, bring to a boil, reduce the heat and simmer for about 10 minutes. After that, remove the saucepan from the heat and add the celery leaves.

When the meatballs are done take them out of the oven and reduce the heat to 180 degrees with convection or 200 degrees top-bottom.
Place sauce evenly on top of the meatballs. Then add some water so the liquid would reach the middle of the meatballs. Next, cover the dish with baking paper and/or foil and place in the oven for 30 minutes. After 20 minutes of baking, you can turn the meatballs over so they will bake evenly.
