If you love salmon, this recipe is for you! Simple, healthy, yet sophisticated, you’ll love this recipe.

We’re going to poach (cook at a temperature below the boiling point rather than boil) salmon in white wine. It will become the most tender, a subtle sour note will balance out the taste, and the thinnest strips of root vegetables will top the dish off.

Cut celery root, carrots, and onions into very thin strips. (Or you can grate carrots and celery on a special grater.)
Tie the sprigs of dill and parsley with kitchen string.
Cut the salmon fillet into about 3 cm thick pieces.

In a small saucepan (just enough to fit the pieces of fish in one layer), mix wine, lemon juice, water, salt, add string-tied herbs and bay leaves, and chopped vegetables. Bring to a boil and cook for 3 min.

Place the salmon in a saucepan so that it’s completely covered with liquid. Cover with a lid and immediately remove from heat. Don’t let it boil.
Let stand in hot water under the lid for about 6-8 min. During this time, the salmon will cook through, but remain very tender.

Take out the fish with a slotted spoon and lay it out on plates, put strips of vegetables on top, garnish with chopped parsley.
