Different Aufstiche, or spreads, are very popular here in Austria. They are served in a Heuriger (wine taverns), cafes, hotels and restaurants for breakfast. Such spreads are usually made from cottage or cream cheese with different ingredients such as sweet pepper, spring onion, blue cheese, greens etc.

The most popular spread is Liptauer, which comes from the Austro-Hungarian Empire and thus is popular in Austria, Hungary and Slovakia. Its name comes from a Slovak region Liptov that was a part of the Austro-Hungarian Empire.

It is extremely delicious, healthy and handy spread. It can easily be stored in the fridge and served for breakfast with fresh bread or as an appetized for lunch or a festive table.

The basic variation of Liptauer is made from sheep milk cheese (or cottage cheese), butter, sour cream, paprika (which makes the spread pink), finely cut onions and sweet peppers.

For a more festive variation you may add capers, anchovy, mustard, pickles, chopped parsley, spring onion, garlic etc.

Depending on the main ingredient Liptauer may differ in consistency. To make Liptauer spicy, add some strong paprika.

It is important that sheep milk cheese or cottage cheese should be dry. If they are wet, you should let cheese drain by hanging it in a draining bag overnight.

The important thing is that in order to soften the butter, you should bring it to room temperature beforehand. If butter is cold, you won’t get a smooth consistency. Liptauer should not have lumps of butter!

Seed the pepper and slice down the white “ribs”. Cut the pepper into small cubes (0.2x0.3 mm).

Peel and cut the onion into small cubes as well (0.2x0.3 mm).

Place the cheese, sour cream and butter in a bowl. Mix with a mixer at low speed until you get a smooth and creamy mixture. Add paprika.

You should end up with a pink and smooth (or, you use cottage cheese, small-grained) mixture.

Add salt to taste (if cheese is salty enough, you may not need more salt), black pepper, paprika and onion. Mix with a spoon or spatula.

Place in the fridge inn a closed contained at least for 2 h.

How to serve:

Serve cold with fresh bread for breakfast or as an appetizer. Sprinkle with chopped greens.

Can be kept refrigerated for up to 5 days.
