There are a bunch of articles on the healthiness of chia seeds nowadays. These seeds were bred by Aztecs in the mountains of South Africa and were widely used in cooking as a source of protein (20%), vitamins and amino acids. Then they were forgotten and ceased to be bred for a while, but now chia seeds recovered their popularity and are widely used, especially for healthy nutrition. If you are still not familiar with chia seeds, you should know that they are not only extremely healthy, but also very delicious – when soaked in a liquid, they swell and become like small jelly beads perfect for light dessert, puddings and cocktails.

Try making this easy yogurt dessert with chia seeds and berries for breakfast. Its peculiarity lies in its universality as you can use any combination of fruit and berries, or make it sugar-free, low-cal, or suitable for vegetarians.

For vegetarians: use coconut yogurt instead of a regular one.

Low-cal: use plain yogurt and light coconut milk.

Sugar-free: use an artificial sweetener of stevia instead of sugar.

If desired, use regular sugar or honey instead of coconut sugar.

Cover chia seeds with coconut milk. Add sugar and let stand for at least 30 min. Stir for a few minutes to avoid lumps formation. The longer seeds soak in coconut milk, the better. You may also prepare the mixture in the evening, and continue making the dessert the next morning to serve it for breakfast.

Pit and cut the cherries into small pieces. If you use apricots or peaches – cut them into small pieces as well. Set aside some fruit or berries for garnishing.

To the chia seed mixture, add 150 ml yogurt. Mix until smooth.

For one portion, assemble the layers in a dessert glass in the following way:

1 layer – ¼ chia seed mixture

2 layer – ½ cherries + ½ fruit or berries

3 layer – ¼ chia seed mixture

4 layer – 50 ml yogurt

May be served as a breakfast food, snack or dessert.

How to keep:

Can be kept refrigerated for up to 1 day. It’s better to keep the chia seed and coconut milk mixture separately (can be kept refrigerated for a few days) then just assemble and garnish before serving.
