Get a load of this cool recipe for healthy and delicious coconut flour tortillas! They are great if you are on a healthy diet, but I’d recommend trying them even if you don’t stick to any diets! These tortillas have a tender taste, pleasant texture, and amazing appearance. 

Coconut flour tortillas are easy to make. Use them to make savory and sweet wraps to your taste. In the photo, you can see a pulled pork tortilla wrap, which was amazing! I’ve also eaten coconut flour tortillas with jam for breakfast, and I loved it too! It’s the perfect choice for school lunch for your kid and for a grown-up party. 

This dough is super easy to work with, it rolls and flips great. Tortillas turn out tasty and elastic.

Combine the dry ingredients in a bowl. Add water and olive oil, stir with a spoon for a couple of minutes to get a thick and smooth dough. Form a ball, wrap it in plastic, and let stand for 10-15 min.

Divide the dough into 4 even parts. Form balls from each one and roll them between two sheets of parchment paper to 1-2 mm thick. Remove the top sheet, place a lid or a bowl of the size you need and cut out a round. Save the excess dough to make one more tortilla.

Heat the skillet over medium/high heat. Grease it with butter. Transfer a tortilla to the skillet. Cook until brown on each side.

Meanwhile, prepare the next tortilla. You can arrange the cooked tortillas in a pile right away but I recommend you to put each one on a paper towel or a rack for a few minutes to they don’t wet through before putting them in a pile.
