This recipe is easy, but it this is how my granny used to marinate beets, that is why it is dear to me. Marinated beets is a wonderful side complement to dinner (especially delicious with mashed potatoes and chops). These pickled beets are so bright in color and taste 🙂

I use home-made raspberry vinegar in this recipe. You can fins the recipe of simple raspberry vinegar here and natulally fermented raspberry vinegar here.

Can be kept in the fridge. Delicious, troubleless and easy!

The best way to prepare beets for this recipe is to bake them. By baking beets become stronger in colour and taste and get the perfect texture.
To bake the beets, preheat your oven for 220 Celcius, put a layer of salt to the baking dish, place beets ove the salt and bake them for 1-1.5h until soft. Take ready beets out of the oven, let them cool.

Peel baked beetroots and slice to your taste. I cut in 2-3 mm thick quarter circles.

Grind the coriander seeds in a mortar. Mix all the ingrediennts in a separate boil. Pour over the beetroots, stir. Transfer to a jar and cover. Place in the fridge for a few hours or overnight. Done!
