3 tbsp Tapioca starch
1 tsp Brown sugar
1/2 tsp Xanthan gum

125 g Margarine cold

While fruits are still around, you should try out a gluten-free galette. Crispy pastry made from wheat, rice, and oat flour is perfect for this kind of pie. 

You should be more careful with the gluten-free dough though as it’s more sticky and less elastic. Roll it between two sheets of parchment paper, not too thin, and it will be great. If you accidentally tore it, no worries – just pull the edges of a hole back together and continue with rolling.

P.S. This gluten-free recipe is dairy-free as well and it uses margarine. But you can use butter, if you want, too.

Combine the dry ingredients in a big bowl.

Dice the cold margarine and add to the dry ingredients. Use your fingertips to rub the dry ingredients and margarine together until it resembles breadcrumbs. Add a few tablespoons of ice water and form a ball. If it doesn’t stick together, add a couple more tablespoons of water until you menage to form a ball. Flatten it into a disk, wrap in plastic and refrigerate for 30 min.

Preheat the oven to 200 degrees.

Pit the apricots and cut each one into 8 wedges.

Take a sheet of parchment paper, dust it with wheat flour, place the dough on it and roll it into a 5 mm thick round. You can cover it with another sheet of parchment paper if you want. Don’t worry if the dough is a bit sticky, it’s fine.

Starting 3-4 cm from the edge of the round, sprinkle the round with ground almond. Arrange the plum wedges in a single layer in concentric circles. Continue until you reach the center of the round. Sprinkle with sugar.

Fold the outer edges of the pastry over the apricots sealing it carefully. Brush the pastry border with plant-based milk and sprinkle with some sugar.

Bake for 45 min at 200 degrees. Broil for 3-5 min to brown it, if you want.
Take out and let it cool before serving.
