Very simple but delicious muffins with grated apple and applesauce.  They are fluffy, moist, sweet, but not overly fruity. The perfect recipe for baking with the kids, everything is kneaded, put into the forms and it bakes. They rise perfectly and are gorgeous.

P.S. The muffins turn out as dark as shown in the photo if you use coconut sugar. If you use lighter sugar, the baked muffins will be lighter.

Preheat the oven to 180 degrees Celsius.
In one bowl mix all the dry ingredients until they are mixed well.
Grate the apples with the skins on a coarse grater.

In another bowl, mix the egg with a fork until smooth, add the sugar, olive oil and applesauce and mix it.

Add the wet ingredients to the dry ingredients, mix until a homogeneous dough of medium thickness is obtained. Add the grated apple.

Place the dough into the muffin pans, filling 3/4 full. Bake for about 22 to 25 minutes.
Take out the baked muffins and let them cool completely.
