was one of the pillars of the New Year table in the former Soviet Union. For many families, even now, it’s unthinkable to celebrate New Year’s Eve without this salad and Olivier salad. 🙂⁠

But that’s not the point now. Let’s give a little thought to where this salad came from.⁠

The secret is very simple, it's not even a secret, because you already know it from the Butterfly Chicken recipe is soaking in the brine. This makes the meat juicy and soft. It’s a sugary treat, but I can’t help but share it with my family since it’s so delicious and reminds me of my childhood. I have to admit, I rarely make it, as it’s a sugary treat :). It’s a gluten-free and dairy-free sausage variant, of course. You can choose to use coconut oil or ghee to make it. Ghee gives a buttery taste, which I personally prefer.⁠

Coconut condensed milk is always sweeter than dairy condensed milk, so I recommend using 100% chocolate to balance out the sweetness a bit. For the Shortbread cookies, you can bake them yourself or purchase them.⁠

Additionally, I like to enhance the flavor of the dessert by adding chili and cinnamon.⁠

The very first published recipe (1896) was straightforward: dice apples and celery and toss with a good mayonnaise. Moreover, there was no mention of celery root or stalk. Since then, Waldorf salad has won the love of Americans and then, it gained worldwide fame. Various chefs have revisited and enhanced the Waldorf salad’s flavor by adding diverse ingredients. The modern Waldorf salad still has the original base of apples and celery in equal amounts. However, the specific components vary according to the recipe and the chef’s preference. The roasted walnuts and grapes (or raisins) are the most popular ingredients here, which suggests that Waldorf salad is a dish for the fall season.⁠

Chicken Liver in Coconut Milk.⁠
Although I’m wary of substituting cow’s milk for coconut milk in all recipes (since they have different textures and flavor profiles and work differently), this liver recipe surprised me and won me over. A classic recipe would be liver stewed in cream. In our version, the coconut milk unexpectedly blends nicely with the flavor and texture of the liver and sautéed onions. The dish turns out tender and tastes great with Indian spices. You can add some curry powder, or I prefer to use turmeric, chili and black pepper. Strangely enough, the pomegranate seeds here (though they are not in the photo yet) are not just for color. They complement the dish perfectly, adding freshness, sourness and color. I highly recommend them as a key ingredient!⁠
