Ingredients

Adjust Servings:
2 Zucchini
3 tbsp. of Chickpea flour
to taste Salt
to taste Grounded black pepper
1/4 tsp. of Ground coriander optionally
1/4 tsp. of Ground cumin optionally
for frying Vegetable oil

Recently I’ve found even a simpler recipe for zucchini fritters with chickpea flour which works both as flour and eggs. It’s super delicious!

Coarsely grate the zucchinis in a large bowl. Add some salt and let stand for 10 min to let the juices release.

Squeeze handfuls of zucchini tightly to remove as much extra water as possible. Discard the liquid.
Add chickpea flour, spices, and salt. Combine well.

Heat some oil in a pan over medium heat. Scoop tablespoons of batter for each fritter, flattening with a spatula to about 5 mm thick. Cook until golden brown on each side.
Transfer to a place covered with a paper towel to get rid of excess oil.
