This morning I cooked these apple syrniki. They are so golden, delicious and wonderful! Since the batter is made in Austrian style it resembles one for cottage cheese knedles, since it has more flour than one for regular syrniki. The texture of cooked apple syrniki is also thicker as baking soda or powder isn’t added to the batter, and this is exactly what makes them so firm. The taste is so rich and apple, and lemon zest adds some flavor to them.

We so much liked this variation, so I am sharing it with you!

Tastes good with sour cream, apricot jam or honey.

It is important that cottage cheese should be dry. So, if necessary, you should let it drain by hanging it in a draining bag overnight.

Mix together the cottage cheese, sugar, eggs, melted butter and lemon zest.

Add flour and mix.

Cover with plastic wrap and refrigerate for 15 min.

Peel and seed the apples. Grate coarsely, add some sugar and let stand for 3-5 min.

Take the batter out. Squeeze the apples from excess juices and add to the batter. Mix.

Add about 0.5 cm of vegetable oil to a pan and warm over medium heat.

With your wet hands, form 8-10 balls. Slightly press each ball on both sides to form a round patty of no more than 1 cm thick. Fry on both sides until golden. Don’t fry oven high heat, since syrniki should cook-though without getting burnt.

How to serve:

Serve hot with sour cream, honey or jam.

How to keep:

Best eaten straight away.
