This salad perfectly combines salty prosciutto, toasted pine nuts, fresh crispy lettuce, and fruity raspberry.

The key element of this salad is dressing based on pomegranate molasses (or pomegranate sauce). If you haven’t tried it yet – you must have it! Pomegranate molasses is a tangy, dark, sour-sweet sauce with an intense flavor. It makes the perfect sauce for meat and base for salad dressings. It’s prepared by boiling pomegranate juice. It’s often called “pomegranate sauce” and various other names depending on the country of origin. For example, pomegranate molasses made in Azerbaijan is called Narsharab.

This raspberry and prosciutto salad with pomegranate dressing is the perfect variant of using pomegranate dressing. Highly recommend!

Toast the pine nuts in a dry pan until golden brown. Transfer to a plate, set aside to chill.

Cut the lettuce leaves into wide strips. Cut the prosciutto into thin strips. Cut the cherry tomatoes in halves or quarters.

Combine all the dressing ingredients in a small jar and give it a shake. Or just combine them in a bowl using a whisk.

In a large salad bowl, add the lettuce, arugula, and half of the dressing. Combine with a fork or spoon. Add the prosciutto, tomatoes, and the remaining dressing. Combine. Sprinkle with raspberries and pine nuts.
Serve right away.
