Everyone has their favorite childhood dish. And mine is mayonnaise cookies! As a child, I was so fascinated by this recipe. First, because of mayonnaise. Everyone thought that it was made of sour cream, while it was actually made of oil! And it was salty, so how could it be an ingredient for so tasty cookies? Second, the recipe said “take enough flour”. Only a very skilled housewife can understand how much is enough. And my Mum is a very skilled housewife indeed!

I suggest you our family recipe of cookies with orange zest. You can also add minced nuts for a better taste.

These cookies are easy and fun to cook with your kids. And they are is also extremely crispy – the crispiest in the whole world!

Beat up butter, margarine, sugar and vanilla sugar. The mixture will become white and fluffy.

Add mayonnaise, mix until smooth.

Add zest and mix.

Add baking soda to the mixture and mix.

Stir in flour and mix until smooth. The mixture will be stiff enough but not sticky.

Use an icing syringe or a pastry bag or a cookie press to make thin strips (approx. 1x6-7 cm).

Place the strips at least 2 cm apart on a baking dish covered with a cookie sheet. You can roll the strips into any shapes, if desired.

Bake for 15-20 min in a 180 degrees Celsius oven until golden brown. Let the cookies cool on a rack.

How to serve:

Better serve cooled as hot cookies won’t be crispy enough. The cookies taste best if you let them stand for about an hour. And the next day they taste even better!

How to keep:

You can keep the cookies in a serving bowl with lid or without, if it’s not very humidly at home. Can be stored up to 5 days without losing its taste, but we usually eat them within 24 hours.
