Spaghetti with Garlic, Oil and Chili Pepper is the classic of Italian cuisine. This dish is just amazing as it’s made literally out of nothing. Spaghetti, garlic, chili (either fresh or flakes), olive oil and salt…it’s unbelievable but this dish is full of taste and glory!

I’d been familiar with this dish and its principles for a while, but I was quite skeptical about it and didn’t give it a chance, like, how can garlic, oil and spaghetti result in something good? But I remembered it the other day when we came back home hungry and craved for a quick dinner. Spaghetti with garlic, oil and chili turned out to be a great idea. Spaghetti is traditionally used here but you are free to experiment with other kinds of pasta. And here we have a most delicious, quick and interesting dish right away!

I highly recommend you try it!

Cook spaghetti al dente – that is it is still firm inside.

SAUTEING GARLIC AND CHILI

Cut the garlic into thin slices. Add some olive oil in a large non-stick pan of room temperature, but try to let it distribute all over the pan. Place the garlic and chili flakes in the center and spread them in a firm layer (in order garlic doesn’t burn). Sauté until soft over medium heat.

Drain the spaghetti but save ½ cup of spaghetti water – we will need it later.

Add the spaghetti to the pan. Add some salt and toss so that the spaghetti be coated with oil. Add ½ cup of spaghetti water and cook over medium heat, tossing. The water will evaporate and the spaghetti will cook through.

Right before the serving, toss in fresh basil leaves. Serve right away.
