Directions
Red-Wine Poached Pears — is a most subtle dessert. So light, refreshing and delightful – it is perfectly concludes a festive or a family meal.
Poached in spiced red wine syrup pears are fragrant, tender and deep red in color. Wine liquid is boiled to syrup to serve with pears.
Dessert should chill in the fridge overnight to impregnate with fragrances.
Serve chilled with ice cream of whipped cream.
Can be kept refrigerated and made ahead.

PREPARING WINE SYRUPIn a saucepan large enough to hold the pears, add wine, sugar, spices and lemon juice. Bring to a boil. |

POACHING PEARSPeel the pears, leaving stem and core intact. Place the pears in the wine and simmer uncovered for 45 min. If the pears are not fully covered in the wine you will have to turn them occasionally. Check for doneness with a fork - you want the pears to be tender but still firm. |

PREPARING WINE SYRUPMeanwhile, strain the wine liquid through a cloth to get rid if spices. Pour about 50 ml to a cold mug, chill, add starch and stir until dissolved. Add to the rest of the liquid, stir and bring to a boil. Let boil for 30-60 sec until thickened. Remove from heat, cover and let chill. |

In a deep ceramic of glass container, place the pears and cover them with the syrup. Cover and refrigerate overnight. |

SERVINGServe cool drizzled with the syrup. The dessert can be also served with whipped cream of ice cream, or topped with chocolate drizzle or grated chocolate. |
